Baby Pork Pies

Pork pie is as British as Charles Dickens, but I can’t bear to make a British-style pie. Oxymoron though it may be, I want a lighter pork pie. That means ricotta, rather than cheddar, three kinds of fresh herbs, fennel seed, and broccoli rabe. This pork pie is what I imagine Fellini would order on set if he wanted to please Dame Maggie Smith. It would make the mistake of being more Italian than British, but it would still be a pork pie and it might just be the best one she’d be lucky enough to eat. This pie lacks fealty to queen and country, but that’s no reason to forego the venerable tradition of a “pie and a pint.”
